Houston Restaurants: Chef Danny Trace, Brennan’s of Houston

Taped 11/5/2009. Danny Trace will be the new executive chef for Brennan’s of Houston when it reopens in Winter 2010. The popular restaurant was almost destroyed by a horrific fire during Hurricane Ike on September 13, 2008. Trace has worked for the Brennan family since around 1995 and most recently worked at their Commander’s Palace restaurant in Destin, Florida.

Orlando and Houston Restaurants Surprise Patrons with Excellent Seafood

While cities like Houston and Orlando are filled with many restaurants that are little more than tourist traps, there are also some fine opportunities to taste the best seafood in these large metropolitan cities. With such close proximity to the Gulf of Mexico and the Atlantic Ocean, Orlando and Houston restaurants are fortunate to have their first pick of the freshest catches every day. And anything that isn’t available from the local seas can easily be flown in fresh every morning to be served up later that day.

Most people don’t think of Orlando when they think of the nation’s best restaurants. Orlando is more closely associated with theme parks and family fun. This Florida city is so close to the Atlantic Ocean, though, that there is plenty of fresh seafood to enjoy and many fine chefs who come here to work with the local cuisines. The best seafood such as Ahi Tuna, Amberjack, Loup De Mer, Mahi Mahi, Mako Shark, Red Snapper, Stuffed Snapper and Swordfish is as close as the local sea.

Houston restaurants may also not always be associated with the best seafood in the country because this city is not as close to the ocean as some cities like Seattle and Miami, and not as close to freshwater as cities like Minneapolis. But the city of Houston is still very close to the Gulf of Mexico, and it is no problem getting the freshest catches into a fine dining restaurant in plenty of time for the lunch time crowd. The best seafood in Texas includes Black Grouper, Monkfish, Swordfish, Salmon and more.

To get the best seafood, you don’t have to go somewhere like San Diego that is well known for fresh fish. In cities like Houston and Orlando, and even in the Midwest, you can find great fresh fish of all varieties flown in every day to please your pallet.

Houston Restaurants: Tony Vallone about Ciao Bello

Recorded on 8/26/2009. Noted restaurateur Tony Vallone tells Cleverley all about his new Houston restaurant, Ciao Bello. His son Jeff Vallone is his partner and they plan to open on September 12, 2009. Located in Houston’s Galleria area at San Felipe & Sage in the Randall’s shopping center, this spot was formerly the home of Jimmy Wilson’s Seafood & Chop House and prior to that, La Strada. Ciao Bello will be a casual neighborhood Italian eatery.

Houston Restaurants: Alessia Antinori at Da Marco

Recorded 10/28/2009. I had lunch with Alessia Antinori and some other folks today at Da Marco in Houston. She is part of the famous Italian winemaking family. Antinori has been producing wine in Tuscany since the 12th century. Alessia and her two sisters are 26th generation winemakers.

Interview date: 12/10/2009 … Location: Alain et Marie Le Notre Culinary Institute, Houston, Texas … Famous French chef Albert Roux visited the Le Notre Culinary Institute. Roux was good friends with Gaston Le Notre, father of Alain Le Notre, founder and owner of the the Le Notre Culinary Institute in Houston, Texas. The reunion of Albert and Alain was very moving, each getting tears in their eyes as they embraced, seeing each other for the first time in thirty years. Alain introduced Albert to his students as “a modern day Escoffier.” (This is not on the video.)
